Low Fat Apple Cinnamon Muffin Recipe

Much to my surprise, a few days ago, my wife picked up a bag of white wheat flour at the supermarket. Much like oat flour, white wheat flour is just now becoming available to consumers. So while its been possible to get white wheat breads, baking your own stuff at home has been pretty tough to do. She also tried this out in her recent moist banana bread recipe, which came out tasting wonderful, without a hint of bitterness you usually get from whole wheat. So it made its way into this recipe as well.

So when my kids started clamoring for breakfast, she decided to give this a shot in her Low Fat Apple Cinnamon Muffin Recipe, which were a total hit in the household, so I decided to share. These were made as jumbo muffins, but of course, you could use a regular muffin pan, and each one would have fewer calories. Finally, the apple flavor is not overpowering, as the recipe takes advantage of the low number of calories in apples, by using apple sauce to reduce the fat content, which in turn cuts calories. Apple Cinnamon Muffin Recipe

Preheat oven to 350°F, and dry blend the following ingredients together, stirring with a fork or whisk,

  • White Wheat Flour- 2 cups
  • Ground Cinnamon – 3 tsp.
  • Baking Powder – 2 tsp.
Add the following liquids, blending with a low speed mixer,
  • Eggs – 2
  • Apple Butter – 1/2 cup
  • Vegetable Oils – 1/4 cup (many any of these other cooking oils works fine)
  • Brown Sugar – 1 cup
  • 1% milk – 1 cup
In a separate container, dry mix the following topping:
  • Brown Sugar – 1/2 cup
  • Ground Cinnamon – 1 tsp
Once ingredients are well-mixed, batter will be thick. Prepare a jumbo muffin pan by coating lightly with a non-stick flour-containing baking spray. Spoon mixture into pan until 1/3-full. Sprinkle topping over unbaked muffin mix and bake for 20-25 minutes, or until golden brown. Yields 8 jumbo muffins.
