Healthy Rice Krispie Treat Recipe Kids Love

My kids love Rice Krispie treats.

Truth be told, so do I.  But as a parent, I can’t really condone eating them.  After all, they’re pretty much devoid of nutritional value.  So, we decided to develop an alternative healthy Rice Krispie treat.

Now I don’t have to feel quite so bad about eating them in front of the kids.

A Healthy Rice Krispie Treat Recipe

  • 2 Tbsp butter
  • one 13-ounce jar of marshmallow cream
  • 1 cup Fiber One bran cereal
  • 1 cup Wheat Puff cereal
  • 1 cup Corn Flakes
  • 2 cups Quick Oats
  • 2 cups Rice Krispies
  • non-stick butter-flavored cooking spray

Spray a 9-inch x 13-inch pane with non-stick butter spray, and set aside.

In a large pot, melt butter over low heat and add marshmallow cream.  Once the ingredients are thoroughly mixed, add cereals with gentle stirring.  Continue to stir until cereal mixture is coated thoroughly.

Spoon the cereal mixture into the 9×13-pan and press firmly.  Place pan in the refrigerator (or freezer) and allow the mixture to set.  Cut into 2-inch squares and serve.  It tastes best served cold.  Just like that, another healthy snacks for kids.

My wife whipped this up a few days ago when the kids were begging for Rick Krispie treats and she was looking for something a bit healthier.  They didn’t even blink at when these were served up as an alternative.

Nutritional information (two 2-inch x 2-inch squares):

  • Calories – 173
  • Fiber – 3.2-grams
  • Fat – 3.8-grams
  • Protein – 2-grams

By contrast, the traditional Rice Krispie recipe has 140-calories, no fiber, 3-grams of fat, and 1-gram of protein.

    Another great cereal to use is Total Cinnamon Crunch… Its got all that “total” healthy stuff in it, but it tastes just like Cinnamon Toast Crunch. It would make a GREAT Rice Krispies substitute, I’ve tried it before with cinnamon toast crunch so I know it would probably work great with Total Cinnamon Crunch as well.

    Guess what??? Rice krispie treats are popular at our house too (with kids and adults)!! So…a bit more healthy recipe – awesome!!! Love it (and I’ll have to try it out!)
