My wife put her creative juices to work in the kitchen this weekend, in an effort to come up with an orange muffin recipe that was both healthy and tasty. This is the result of her labor. The kids voted two thumbs up, and recipes like this are a great approach to getting fiber into our kids diet.
High Fiber Orange Muffin Recipe
Ingredients
- Quick Oats – 1 cup
- Fiber One Cereal – 1 cup
- 2% Milk – 1 cup
- Orange Juice – 1 1/4 cup
- Self-rising flour – 1 cup
- Stone Ground Whole Wheat Flour – 1 cup
- Brown Sugar – 1 cup, firmly packed
- Eggs – 2
- Vegetable Oil – 1/3 cup
- Ground Cinnamon – 3 tsp
- Baking Powder – 1 tsp
- Baking Soda – 1 tsp
Preheat oven to 350-degrees F.
Combine Quick Oats, Fiber One cereal, milk, and orange juice. Whisk thoroughly and let the mixture sit for 15 minutes. Then add eggs, oil, and brown sugar. Mix well.
In a separate bowl, combine wheat flour, self-rising flour, baking soda, baking powder and cinnamon.
Combine wet and dry ingredients and spoon recipe into a muffin pan. Spray a muffin pan with Baker’s Spray and fill muffin cups 3/4 full with mixture.
Bake 15-minutes at 350-degrees F. Cool and serve.
Recipe makes 2-dozen small muffins.
