Oatmeal and Flax Healthy Pancakes

We’re always looking for new recipes for eating healthy.  My wife came up with these most excellent instant oatmeal and flax pancakes, which we make both for ourselves and the kids.  Most parents know how hard it is to get kids to eat healthy foods.  Ours are no different.  So, we try to sneak in as much nutrition as possible where we can.

  1. Oat flour – 1 cup
  2. All purpose flour – 1 cup
  3. Whole wheat graham flour – 1 cup
  4. Ground flax seed – 1/3 cup
  5. Sugar – 3 tbsp
  6. Vegetable oil – 1/3 cup
  7. Eggs – 3 eggs
  8. 1% milk – 2 1/2 cups
  9. Baking soda – 2 1/2 tsp
  10. Baking powder – 3 1/2 tsp
  11. Butter extract – 1 tsp
  12. Vanilla – 1 tsp

Combine all of the dry ingredients and mix with a whisk, then add the liquids while mixing.  We usually grill them on a griddle, and the recipe makes about 18 pancakes 3 1/2-inches in diameter.  Each pancake contains 135 calories and 2 grams of fiber.

These are great topped with a handful of chopped walnuts, some lite pancake syrup, and a dollop of whipped cream.  For the most part, I don’t like artificial sweeteners, but for some reason I can tolerate them in pancake syrup.  I don’t know why, but there you have it.  “Regular” syrup just tastes too sweet to me now.

So, why should you consider going to the trouble of making an oatmeal and flax pancake?  The use of oat flour and wheat flour contributes soluble fiber, which is good for both heart and digestive health.  The ground flax contributes both fiber and omega fatty acids.  All far superior to your standard boxed pancake fare.  As far as taste is concerned, our kids have never complained about a change in taste or texture, relative to an all white flour pancake.  You will probably notice them being a little more dry, and the ground flax contributes a nutty taste.  My wife sometimes adds a teaspoon of cinnamon to spice them up a bit.
