A Healthy Alternative To Cinnamon Rolls For Kids Breakfast
I’ve mentioned before that my wife is a very creative cook. She has created some interesting and healthy healthier alternatives to some pretty bad foods. One such alternative is her Cinnamon Rollups. This is a healthy alternative to cinnamon rolls that our kids regularly clamor for at breakfast. And for that matter, all other times of day as well.
Lately, the kids have had these at breakfast time many mornings of the week. I’m not going to say they’re as healthy as, say a well-made vegetable omlet, but they’re a far sight better than a lot of things we could give them.
Ingredients
- Mission Carb-Balance large soft taco
- 2 Tbsp. melted Butter
- 4 tsp Cinnamon
- 1 cup Brown Sugar
- 1 lb Powdered Sugar
- 3/8 – 1/2 cup Milk
- 1 tsp. Vanilla
How They’re Made
- Combine the cinnamon and brown sugar in a bowl and mix well with a fork.
- Pour the powdered sugar into a large mixing bowl and mix in the milk, 1 Tbsp melted butter, and vanilla until the sugar is completely dissolved. This is the glaze for the roll-up. (This will make a large excess of glaze. Reduce accordingly)
- Place the soft taco on a microwave safe plate, and spread a thin layer butter on the soft taco. (An alterative to this is butter spray). You want just enough to make the brown sugar/cinnamon mixture stick.
- Sprinkle a thin layer of the brown sugar/cinnamon mixture onto the taco.
- Roll the taco up enchilada-style.
- Place it in the microwave for 10-seconds per cinnamon rollup
- Slice the rollup into bite-sized pieces and drizzle with a thin layer of glaze.
As I’ve mentioned before, the tacos contain about 21-grams of fiber and 8-grams of protein, so they’re very filling. Of course, the sugar combination isn’t the least bit healthy, but fortunately, it doesn’t take much of this to taste pretty sweet. As I mentioned in our other recipe using these tacos, be cautious if you’re not accustomed to eating much fiber. Most foods high in fiber aren’t sweet, so we aren’t tempted to gorge ourselves on them.
