Healthy Breakfast For Kids

Over the course of the last year, my wife has turned her creative cooking juices toward developing healthy food that even our discriminating kids will love.  Yesterday, she was inspired to make several high fiber breakfast recipes.  The best, she called a “Berry Breakfast Rollup.”  This is a derivative on a few recipes she’s tried now with the “Mission Carb Balance 8-inch Soft Taco,” and its the perfect healthy breakfast for kids.high fiber breakfast recipes Healthy Breakfast For Kids

Mission makes several types of high fiber, low fat soft tacos that we have used to make healthy food and snacks for both ourselves, and that we’ve used in kids recipes.  I have a friend that once described high fiber foods as tasting like grass.  This tastes great, and is a way to sneak fiber into our diets.  Not only is it delicious and loaded with fiber, this recipe is a great source of the antioxidant ellagic acid, too.

Healthy Breakfast For Kids

  1. 1/3-brick low fat cream cheese
  2. 1/2-cup marshmallow cream
  3. 2-tbsp lemon juice.
  4. Cut up fresh strawberries, cut into quarters
  5. Fresh blueberries
  6. Fresh raspberries, cut in half
  7. Mission Carb Balance Soft Taco Shells

How They’re Made

  1. Combine the first three ingredients and mix with a blender until smooth
  2. Heat a soft taco shell in microwave for 15-seconds, or until warm
  3. Spread 1-2 tbsp of the topping on the shell and add berries to taste.
  4. Roll up the soft taco shell and enjoy!

The exact nutritional content will vary, depending upon how much topping and berries you use, but the wrap itself contains 11-grams of fiber and 5-grams of protein, with only 110-calories.  The fiber, nutrients, and antioxidants from the berries are all well documented.

And for what its worth, the kids gave them two thumbs up!  One word of warning though.  If you don’t eat much fiber, you may want to take it easy at first.
